The third option is Mole Pork Tenderloin Sliders. We used a homemade mole poblano gifted by a friend that traveled to Puebla. Any mole works even green pepita mole if desired. The bread is a sweet Hawaiian slider. The sliders have chopped roasted peanuts and a side of pickled onions. If you prefer a gluten-free option, shred the pork loin, combine with the mole and make tacos using corn tortillas.
