Banana, chocolate, and vanilla go very well together. I enjoyed banana pudding cups with chocolate during my childhood years. My mom used to add one pudding cup to my brown bag, along with a sandwich and a banana.

Inspired by those childhood snacks, I thought of making an adult pudding cup with a gourmet twist. Because who doesnā€™t like good quality dark chocolate and toasted hazelnuts?

I made these pudding cups with ingredients I had in my pantry and bananas. The vegan chocolate and vanilla puddings allow you to prepare them a day in advance and layering using a piping bag or a standard plastic bag.

Ingredients
  

  • 1 box vegan chocolate pudding
  • 1 box vegan vanilla pudding
  • 2 cups almond milk
  • 2 bananas sliced
  • 1 cup vanilla cookies
  • 2 squares dark chocolate
  • 1 teaspoon hazelnuts
  • 2 rolled wafers

Instructions
 

  • Prepare the vanilla and chocolate pudding using one cup of almond milk each, and mix with a hand mixer. Blend until getting a thick pudding texture.
  • Scoop the pudding into plastic bags or piping bags for easy layering of the pudding dessert.
  • Layer first the vanilla pudding and add banana slices. Add another layer of chocolate pudding and add the cookies. Continue doing that until the cup is full.
  • Decorate with hazelnuts, dark chocolate pieces, and rolled french vanilla wafers.

The instant pudding requires no cooking time. Optional you can use a double bowl with ice in the bottom for a faster thickening. The pudding texture must be thick enough for piping.Ā
