The pomegranate guacamole was a classic in my household. My Aunt Minita introduced the family to this fun appetizer. It rapidly became a holiday favorite.

While we are not organizing a posada this year, we like to enjoy good guacamole. The holiday avocado toast is a welcomed treat. The ingredients are fresh, and the combination of the pomegranate and the avocado becomes a sensible option. Prepare first the holiday guacamole and then make the avocado toast.

Avocados from Mexico make authentic guacamole. The holiday guacamole can adapt to the family’s palate. We like it spicy. We use serrano peppers. But those are optional.

If your family doesn’t like chunky guacamole, mash the avocado alone with lime juice, do not add the onions. Garnish with pomegranate seeds. Lime juice is important as it gets to avoid oxidation to keep the holiday guacamole bright green.

I know many people don’t like cilantro. If that is the case, make the pomegranate guacamole without this ingredient too. What is important is that you use this recipe as the inspiration to create your own holiday guacamole version.

Pomegranates are sometimes difficult to process. Many markets carry seeded pomegranate packaged in plastic containers with a lid. It is a bit expensive. But saves time when making the holiday guacamole.

If you buy the pomegranates whole, it is easy to take the seeds out. Use a pomegranate seeder or with the back of a ladle, punch the fruit in several places to allow the seeds to come out easily.

Cut the top and then cut the fruit into three parts. Place the pomegranate facing down and have a plastic container in the bottom to capture the seeds.

Use your hands to remove the remaining seeds and remove any leftover peel. Use gloves. The pomegranate juice gets the hands tinted.

For making avocado appetizers or the holiday avocado toast, use a flatbread of your choice. And cookie cutters to cut the fun holiday shapes.

Ingredients
  

For the holiday guacamole

  • 1 large avocado hass or 2 small
  • 1/2 cup pomegranate seeds
  • 1/4 cup white onion finely chopped (optional)
  • 1 serrano pepper finely chopped (optional)
  • 1/3 cup cilantro finely chopped (optional)
  • 1 lime juiced
  • salt to taste

For the holiday avocado toast

  • 1/2 cup guacamole
  • 1/4 cup pomegranate seeds
  • 3 flatbreads cut into holiday shapes

Instructions
 

For the holiday guacamole

  • Cut the avocado in halves, take out the pit carefully with a knife.
  • Scoop the flesh and mash the avocado in a bowl using a fork until getting a creamy consistency.
  • Add the lime juice and rest of the ingredients, combine well. Taste and add salt as needed.
  • Serve with corn chips or your favorite toast

For the holiday avocado toast

  • Cut the flatbread with cookie cutters and set aside.
  • Toast the flatbread in the oven.
  • Spread guacamole to each of the flatbreads.
  • Decorate with pomegranate seeds.
