A Waffle Breakfast Dinner is what’s on the menu at Casa Martin this week. At least once a week we meet with our close family to have dinner or enjoy la merienda. We meet at home with my stepdaughters, my grandson Dominic and my mother-in-law. Every week I have to create the menu to please everyone.
Sometimes I have to confess it is a bit difficult because everyone likes something different. Our family is diverse and as such is their appetite and palate. But I have found that everyone enjoys eating breakfast dishes at dinner time. My solution: A yummy waffle breakfast dinner inspired by the trendy Waffle Food Trucks menu!

Made with (1) Kellogg’s® Eggo® Thick & Fluffy Cinnamon Brown Sugar Waffles, (1 scoop) Breyers® Natural Vanilla Ice Cream, (1 teaspoon) DOLE® Pineapple Tidbits, (1/2 teaspoon) Planters Dry Roasted Peanuts, (1 dollop) Reddi-wip® Original Dairy Whipped Topping and a dash of cinnamon ~ Approx 340 calories. One serving.
Strawberry Chocolate Waffle
Made with (1) Kellogg’s® Eggo® Homestyle Waffles, (1 scoop) Breyers® Natural Vanilla Ice Cream, (4 pieces) Frozen DOLE® Sliced Strawberries, (1/4 teaspoon) Planters Dry Roasted Peanuts, (1/3 teaspoon) M&M’S® Minis Milk Chocolate Candies, (1 dollop) Reddi-wip® Original Dairy Whipped Topping and (1 teaspoon) Smucker’s® Hot Fudge Spoonable Ice Cream Topping ~ Approx. 450 calories, 21.6g sugar. Florida weather in the evening invites for a dinner al fresco and setting up my table in the lanai. For the set up I used cheerful colors that contrast with the wooden table we have outside. And the turquoise tableware with white motifs goes very well with the red patterned napkins. Added some cactus plants for a natural look.
Setting up a nice table is important to show how much you love your family and how special they are. Eating as a family creates memories and bonds that will last forever. Besides conversation and spending time together is essential too.
This waffle breakfast dinner menu is simple and ready in a few minutes. Best of all is that everyone can have fun making their own waffle creation. The only dish I made was the mollete waffles, as those require baking. And the pico de gallo salsa. Which is essential for this bite.
I was surprised by the yummy result of doing a fusion between the Mexican and American cuisine. Preparing classic molletes with waffles instead of bolillo bread it is a good idea. Now I want to try making tacos de guisado with Eggo Homestyle waffles. I think they would turn out to be a very tasty bite. Are you ready to try them?
