February 22 is National Margarita Day and what a better way to celebrate but with a natural Kiwi Margarita cocktail that is refreshing and uses seasonal fruit. In this recipe I am combining prickly pear flavor along with the lime and the Mexican tequila. Come and celebrate with me National Margarita day saying cheers with this delicious Kiwi Margarita, let’s cook!
- 6 fresh kiwis peeled and cut in rounds
- 2 cups of natural simple syrup
- 1 cup of lime juice freshly squeezed
- 1/2 cup of tequila
- 1/2 cup of prickly pear liqueur
- 1 cup of ice
Preparation time: 15 minutes. Serves 4 drinks. Cost per drink is less than $3.00 each depending on the cost of the ingredients at your local supermarket. You will need a blender and margarita glasses.
Set up your blender in flat surface and add the kiwis, the natural simple syrup, the lime juice, the tequila, the prickly pear liqueur and the ice. Blend on high until getting a smooth consistency and when all ingredients are perfectly combines, then serve immediately in a margarita glass and enjoy!
This Kiwi Margarita cocktail is perfect for any occasion and a nice surprise to serve to your guests. Kiwis are sold nationwide and now are in season, so they are very economical. The Prickly pear liqueur you can find at your local liquor store, this ingredient will give a nice flavoring to the margarita and make it even more interesting. With this same preparation you can prepare Kiwi Margarita popsicles, just add the preparation to plastic cups and place in the freezer, when almost done insert a popsicle wooden stick. This is a fun way to serve a cocktail specially when you are planning for those spring and summer gathering at home or when having a grilling cookout.
