Pickling is an art and a preservation technique from the past that nowadays has become very popular. Many cuisines including the Italian, the French, the Mexican and the Brazilian cuisines include in their menu favorites pickled fruits and veggies to serve as a snack or to complement a meal. Inspired in the Brazilian mineira cuisine and its varied array of peppers called “pimenta” I have created a recipe for Spicy Pickled Pineapple on Sous Vide. This could become a great gourmet gift cooked by you to give away family and friends during the holidays. Nothing better than a gift coming from your kitchen.
