Cilantro Lime Rice is one of those recipes that you need in hand since this is the perfect side dish to so many different meals. Besides rice is one of the signatures dishes in our latino cuisine. Rice is prepared in so many different ways and also colors.
Cilantro Lime Rice
- 1 cup of white rice
- 1 tablespoon of cooking oil
- 1 clove large garlicpureed
- 1 teaspoon of sea salt
- 2 cups of boiling water
- 1 tablespoon of cilantro paste
- 1 lime
- Place a a sautéing pan in the stove and add cooking oil, let the oil warm and add the rice. Stir and combine with the oil.
- Then add the garlic pureed and the salt and combine.
- Pour the boiling water and add the cilantro paste and stir once.
- Finish adding the juice of one lime and cook covered for 15-20 minutes until al dente.
- Enjoy with your favorite meat.
We do it yellow using saffron or red with tomato paste, we add vegetables like peas and carrots, we like it combined with beans and even with pasta. We also like rice cooked with seafood and meats, to prepare yummy casseroles and we even eat it as dessert. Who doesn’t love a good arroz con leche.

This cilantro lime rice goes perfect with grilled meats, like chicken, beef or seafood. I also like it as the base to serve grilled skewers also known in Spanish as alambres. If you have leftovers or this cilantro lime rice, which I doubt, you can use for making burritos or to add to hamburger meat to make meatballs or hamburger patties instead of the breadcrumbs.

We really like our rice al dente not mushy.
