Carrot Clementine Pineapple Punch

The Carrot Clementine Pineapple Punch is my favorite drink to serve during Easter. I call it my Easter Bunny Punch. It is fresh, and has natural citrus, fruit and carrot juice.

Course: Beverages
Cuisine: Mexican Cuisine
Servings: 8 servings
Author: Chef Adriana Martin

Ingredients

  • 2 cups ice
  • 2 cups carrot juice
  • 2 cups pineapple juice
  • 2 cups clementine juice

Instructions

  • In a pitcher add the ice.
  • Then add the carrot, pineapple and clementine juices.
  • Stir well and serve in tall glasses. Add an Easter bunny straw and enjoy.

Notes

Clementine juice can be replaced with classic orange juice or tangerine juice.

Besides carrots have a great source of beta-carotene, vitamin K, potassium and antioxidants. Clementines are very nice citrus too. As has vitamin C and a beautiful orange color to brighten up the day. After church when family gets home everyone is thirsty offering a nice wholesome libation is the way to go.

Watch the video and learn how easy it is to make this Easter Bunny Punch.

In Florida temperatures are starting to get warmer offering juices and drinks that are nutritious and provide good amount of vitamins is a good way to go. Of course always pairing with natural water to keep good hydration.

In the latino culture natural juices and agua fresca are a common offering. That is why we always offer in our meals a natural drink to pair the food and iced water.

Easter menu this year is chipotle pineapple ham, garlic roasted mashed potatoes and grilled asparagus tips. All this food choices go very nicely with the carrot clementine pineapple punch.

To end the meal we suggest classic carrot cake cupcakes and Easter sweets. Making easy recipes and using local seasonal ingredients when we entertain at home is a must so that we can enjoy the celebration as much as our guests while offering a good balanced menu. That includes protein, vegetables and fruits. All combined to make a wonderful feast.

That’s an interesting combination. I can’t remember the last time I had carrot juice. Mixed with the others I’ll bet it’s pretty good!

I am so curious to find out exactly what this mixture tastes like. I know I like pineapple, but not so sure about carrot or clementine.

I dont think I’ve ever had clementine juice before. But I definitely prefer clementines to oranges, so I think I’d enjoy it. This looks like such a healthy concoction!

That’s a first for me. When I was little my aunt used to make carrot juice but never with clementine and pineapples. I think that might give it an even sweeter taste. I must give it a try.

I would need to find a substitute for the pineapple juice. That irritates my stomach really bad and I’ll be in pain for hours. Maybe if I just use orange?

That is one healthy and refreshing drink and perfect for this weekend . Love the colors of the drink. I am not a big fan of just carrot juice, but this with the clementine and pineapple is perfect.
