Ingredients

  • 1 can of evaporated milk
  • 1 can of condensed milk
  • 1 cup of key lime juice you can replace with Persian limes
  • 1 tablespoon of lime peel
  • 1 cup of cookie crumbs
  • 10 wooden sticks
  • 1 popsicle mold you can replace with 10 plastic cups

Instructions

  • Place the evaporated milk in the freezer and let it get cold. This will allow the milk to double when whipped. Juice the lemons until getting one cup of juice.
  • Add the cold evaporated milk to the blender and whip for 5 minutes on high.
  • Pour the condensed milk, the lemon peel and the lemon juice and blend for other 5 minutes.
  • Fill the popsicle mold with the key lime pay mix, place the lid and insert the wooden sticks. Freeze overnight.
  • To serve take the popsicles out of the mold and dust with cookie crumbs.

Notes

The popsicles require overnight freezing or at least 8 hours inside the freezer to set.

For making the popsicles you will need an ice popĀ mold, but if you don’t have one you can use small plasticĀ cups, and of course wooden sticks, with those then ice pops wouldĀ not be, right. Watch the video to get the scoop on how to make the creamy popsicles too.
