Baking Piloncillo Ginger Cookies is an anual tradition in my home. This recipe is easy and incorporates traditional American Christmas flavors with my Mexican style of cooking. In most Mexican bakeries the “marranitos” or little pig cookies are sold for the holidays.

As a child I loved those marranitos that are made with piloncillo (a raw sugar cone), spices like cinnamon, star anise, yeast and flour. These cookies have a cake consistency, are soft and sweet. Inspired on those flavors I have created a recipe for Mexican Piloncillo Ginger Cookies.

Mexican Piloncillo Ginger Cookies

Ingredients
  

  • 2 1/2 cups of flour
  • 2 teaspoons of baking soda
  • 2 teaspoons of ground ginger
  • 1/4 teaspoon of salt
  • 1 stick of softened butter
  • 1 egg
  • 1 cup of piloncillo syrup made with 1 cup of water 3 cones of piloncillo, 2 star anise, 2 sticks of cinnamon
  • 1 bottle of white cookie icing
  • 2 tablespoons of sugar sprinkles
  • 2 sheets of parchment paper
  • 2 cookie baking trays

Instructions
 

  • Sift the flour with the baking soda and set aside. Add the salt, the ginger and the butter and combine. You can use the stand up mixer for that.
  • Add the egg and the piloncillo syrup until getting a firm consistency. Take the dough of the the bowl and refrigerate for 30 minutes covered.
  • On a firm surface sprinkle some flour and using the rolling pin flatten the dough. Cut the cookies using a piggy cookie cutter. Cover the baking tray with parchment paper and place the cookies.
  • Set the oven on the cookie baking temp and bake for 15 minutes. Take out of the oven and let them get cold.
  • Using cookie frosting and sprinkles decorate cookies. Or simply dust the cookies with confectioners sugar and serve with a cup of frothy coffee.

Using the ginger cookie recipe as a base but replacing the raw sugar with piloncillo and adding cinnamon and star anise. The result is wonderful. The cookies are sweet, aromatic and look so pretty. Because I am using a piggy cookie cutter that resembles those marranitos that I enjoyed so much when I was younger.

In my own family we have suffered the loss of beloved ones including my nephew, who was 4 year’s old when he lost his battle against cancer. For me it is very important  to support brands that help raise funds for this causes that hurt the younger in our society.
