Plantain Tortitas with Queso Fresco for Dia de Muertos. A Mexican tradition that we embrace here in the US as part of our legacy and culture. Ingredients for the plantain tortitas

INGREDIENTS

  • 3 plantains (not green yet yellow for better results)
  • 4 cups of water
  • 1 teaspoon of salt
  • 2 cups of shredded mozzarella cheese
  • 2 cups of all purpose flour
  • 1/2 cup of cooking oil
  • 1 cup of Crema Mexicana Cacique
  • 1 Cacique Ranchero Queso Fresco

Preparation time: 1 hour. Makes 10 tortitas. Two plantain tortitas per serving. Cost per serving less than $2.00 dollars. You will need a baking sheet, a pressure cooker, measuring cups, a frying pan,  a spatula,  a masher, an ice cream scoop, a knife and a cutting board.

Clean the plantains and cut the ends and then in three portions each. Add the cut plantains, the water and the salt to the pressure cooker and seal. Cook for 1o minutes. Open the pressure cooker following safety guidelines. Remove the water and then the skin from the plantains and then place those on a bowl. Mash the plantains until getting a smooth paste. Using an ice cream scoop to allow same size per portion, make first tortita and fill with shredded mozzarella cheese and seal. Seal the tortita with all purpose flour and follow this process until making ten plantain tortitas in total. Fry the tortitas one by one until golden brown.

Serve hot and drizzle with crema and queso

Then to serve drizzle with Crema Mexicana Cacique and crumbles of Cacique Ranchero Queso Fresco. The center of the tortita will be gooey because of the melted cheese and the combination with the fresh cream and the queso fresco crumbles will melt on your mouth. You can eat the tortitas as an appetizer, a dessert or a side dish.
