Ingredients
  

  • 1 pound of purple potatoes
  • 1 teaspoon of salt
  • 1 teaspoon of coarse black pepper
  • 1 tablespoon of olive oil
  • 1 tablespoon of basil pesto sauce
  • 1 bunch of fresh curly parsley

Instructions
 

  • Clean the potatoes and remove any dirt, do not peel.
  • Place in a roasting pan and season with salt and pepper. Add the olive oil and roast for 20 minutes.
  • Cut the potatoes in halves and add the basil pesto sauce.
  • Garnish with fresh curly parsley and serve on a nice bowl.
  • Enjoy immediately.

Notes

When cooking purple potatoes leave the skin on to get the most of the nutrients. Just clean well to remove any impurities or dirt as they grow in the ground. Purple potatoes are starchy and have a nutty flavor, they are a versatile ingredient and go well with many combinations.

Purple potatoes can be easily found and are available in most markets year round. The nutritional value that purple potatoes have is something to consider as they are high in potassium and have antioxidants which are good for a heart healthy diet.
