Our menu suggestion today is a Gooseberries and Spinach Salad garnished with pumpkin pepitas, purple onions, feta cheese crumbles and a simple white balsamic dressing. This is a very simple dish but full of flavor!

Ingredients
  

  • 4 cups of fresh spinach
  • 2 cups of cleaned gooseberries
  • 1/3 cup of purple onion juliennes
  • 1/2 cup of pepitas
  • 1/2 cup of crumbled feta cheese
  • 1/2 cup of white balsamic vinegar
  • 1/4 cup of olive oil
  • Salt and pepper to taste

Instructions
 

  • Place the fresh spinach on a salad bowl and add the gooseberries.
  • Layer the onions, the pepitas and the crumbled feta cheese.
  • In a bowl add the vinegar and the oil and mix to make the simple vinaigrette
  • Add salt and pepper to taste
  • Serve family style
