Kebabs Feast

In my opinion the grill can be used year round and is a great way to entertain in the outdoors. Here some of my latest creations that I´m sure you will love to try. For these recipes you will need a grill, metal skewers, 3 rectangular Pyrex, pair of tongs, Tupperware.

Beef Kebabs

  • 2 filet mignons
  • Green peppers
  • Onions
  • Cherry tomatoes
  • Portabella mushrooms

For the marinade:

  • Handful of chopped fresh oregano
  • 2 tablespoon of olive oil
  • 1 table spoons of balsamic vinegar
  • Salt
  • Pepper

Mix all the ingredients of the marinade and place in a plastic container, cut the filet mignons in big squares and place to rest for 30 minutes with the marinade you just did. Cut the onions and the green peppers in big chunks. Take your skewers and alternate beef with the veggies, tomato and mushrooms. When ready place in a pyrex, cover with plastic and refrigerate until ready to grill.

Pork Kebabs

  • 1 small pork loin
  • Sweet potatoes

For the marinade:

  • Handful of chopped fresh rosemary
  • 2 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 2 chopped garlic cloves
  • 3 tablespoons of thick classic BBQ sauce
  • Salt
  • Pepper

Mix all the ingredients of the marinade and place in a plastic container, cut the pork loin and the sweet potatoes in big squares and place to rest for 30 minutes with the marinade you just did. Take your skewers and alternate beef with the sweet potato. When ready place in a pyrex, cover with plastic and refrigerate until ready to grill.

Chicken Kebabs

  • 2 chicken breasts with no bone
  • Green peppers
  • Onions

For the marinade:

  • 2 tablespoon of olive oil
  • 1 tablespoon of Tagine Spice (which is a combination of paprika, ginger, turmeric and black pepper)
  • The juice of 2 lemons
  • Salt

Mix all the ingredients of the marinade and place in a plastic container, cut the chicken breasts in big squares and place to rest for 30 minutes with the marinade you just did. Cut the onions and the green peppers in big chunks. Take your skewers and alternate chicken with the veggies. When ready place in a pyrex, cover with plastic and refrigerate until ready to grill.

The servings provided will feed 4 to 6 people and price range per person will be around $10.00 as you will be using very good quality and fresh ingredients. To accompany these great kebabs you can prepare rice and a salad. Remember, these recipes you can prepare a day in advance just refrigerate and store properly to avoid contamination and bacteria growth.

To cook the kebabs turn on the grill and place the kebabs, make sure grill is clean so that you get nice grill marks. Remember that Pork takes longer to cook and chicken takes less time so in the mean time you let them get cozy in the fire make sure you sip a good libation and mingle with your guests.
