It is time for tea cupcakes part of the scene of this edible Christmas village. The inspiration comes from the Nostalgic Old Winter Wonderland Decor. The flavor of the cupcakes is apple spice.
Preheat the oven at 375F and lower to 350F for baking.
In a mixing bowl, add the cake mix and combine with the eggs, the milk, the butter, and the spices. Mix well using the stand mixer until getting a homogeneous batter.
Spray the cakelet pan with nonstick baker's spray. Pour the batter and make sure to shake the pan for even batter covering.
Bake the cupcakes for 30-45 minutes. Insert a pin to verify cupcakes are cooked. Take them out iofthe oven and let them cool.
Remove the cupcakes from the pan and set them in a rack for decorating. Decorate the cupcakes with royal icing. Use white, red, blue, and green. Use sugar motifs and sprinkles to finish the look.
For the royal icing
In a bowl, add the egg whites with the vanilla extract, and mix until getting a frothy consistency.
Incorporate the confectioner's sugar in stages and continue whipping for about 5 to 7 minutes or until the mix forms stiff glossy peaks.
Divide in bowls and color using the food gel colors. Stuff the royal icing into a piping bag with a small round tip.
Keep the rest of the royal icing covered with a damp cloth to avoid drying.
Notes
Suppose you overfill the cupcakes, no worries. When the cupcakes are cold, you can cut the bottom to even out the tea cakes. Make sure to use a sturdy cakelet pan and spray with baker's spray for easy release and keep the tea cake detail. Wait till the tea cakes are cold to start the decoration process. If you prefer to use a royal icing mix that only needs water, you can do or otherwise use writing icing tubes that already come in the desired colors. Whatever is easier. If you want to use your own cake mix (vegan, GF, keto, etc.) or a homemade cake recipe to make the cupcakes, perfectly fine.
