Fun Bug Snacks with Fresh Produce

The fun bug snacks include heartbreakers tomatoes from my garden, which have a heart shape; plus celery sticks, beet sprouts, lemons, cucumber slices, cashews, roasted chickpeas, cooked beets, nasturtium flowers, and rosemary. For spreads, we added creme cheese and beet hummus, both perfect to use when making this tasty bug inspired bites as they add protein too.

  • Pairing knife
  • Vegetable cutter

Ingredients
  

  • 6 celery sticks
  • 1/2 cup beet hummus
  • 6 cooked beet slices
  • 12 roasted chickpeas
  • 1 rosemary sprig
  • 6 cashews
  • 1/2 cup soften cream cheese
  • 1 mini cucumber thinly sliced
  • 1/2 yellow lemon cut in slices
  • 6 heatbreaker tomatoes
  • 2 tablespoons beet sprouts
  • 3 nasturtium flowers
  • 2 cups spring mix

Instructions
 

  • Prep the veggies by cleaning and cutting. Stuff 6 of the celery sticks with cream cheese and the other six with beet hummus
  • Form the bugs using the different elements following the images on the picture. 
  • Be creative and let your imagination do the work. 
  • Serve the bug snacks over a bed of greens.
