Gooseberries and Spinach Salad
Our menu suggestion today is a Gooseberries and Spinach Salad garnished with pumpkin pepitas, purple onions, feta cheese crumbles and a simple white balsamic dressing. This is a very simple dish but full of flavor!
- 4 cups of fresh spinach
- 2 cups of cleaned gooseberries
- 1/3 cup of purple onion juliennes
- 1/2 cup of pepitas
- 1/2 cup of crumbled feta cheese
- 1/2 cup of white balsamic vinegar
- 1/4 cup of olive oil
- Salt and pepper to taste
Place the fresh spinach on a salad bowl and add the gooseberries.
Layer the onions, the pepitas and the crumbled feta cheese.
In a bowl add the vinegar and the oil and mix to make the simple vinaigrette
Add salt and pepper to taste
Serve family style
