Grilled watermelon salsa is one of my staples for grilling season. Watermelon is now in season, it is less expensive and has a yummy sweet flavor to make an out of this world salsa.
Wash the watermelon and cut two thick slices of the fruit. Grill the watermelon on both sides for 3 to 4 minutes until getting the grill marks. Cut into cubes and place in a bowl.
Add the chopped jalapeño, the red onion, the lemon juice and stir.
Season with salt to taste and add the chopped cilantro.
Add the salsa to a concave half of watermelon to use as a decorative bowl on the table.
Finish with the grated Cotija cheese and place on the table.
Notes
Keep the salsa in the refrigerator until you're ready to serve.
