I am in love with gooseberries that is why our menu suggestion today is a Gooseberries and Spinach Salad garnished with pumpkin pepitas, purple onions, feta cheese crumbles and a simple white balsamic dressing. This is a very simple dish but full of flavor!
Gooseberries, golden berries, ground cherries or also called aguaymantos or Inca berries come from the Andes of Peru but are also harvested in Colombia, Ecuador, South Africa and New Zealand.
I love to discover new flavors and fresh produce so got really excited when I found these at my local store and immediately I thought would go great for a green salad with spinach and pumpkin seeds.
But now let’s talk about this beautiful fruit and its properties. Gooseberries are related to the tomatillo and the Chinese lantern. The fruit looks like a small yellow tomato but when you bite into it, it has a tart, earthy and sweet flavor. Nothing like a tomato.
