Algunas recetas recomiendan harina fuerte para pan, pero en mi opini\u00f3n, esa harina hace que el pan sea demasiado duro en lugar de tierno.<\/li>\n<li>La levadura fresca es el ingrediente preferido en la receta cl\u00e1sica del pan de yema de Oaxaca. En su lugar, usamos una levadura superior de la marca Red Star. La levadura de Platinum Red Star Yeast tiene acondicionadores de masa que dan como resultado un pan con calidad de panader\u00eda.<\/li>\n<li>La mantequilla y los huevos deben estar a temperatura ambiente. Esto permite que la masa de pan se mezcle bien y se esponje correctamente.<\/li>\n<li>Al fermentar la levadura, usa agua tibia (m\u00e1ximo 110F) mezclada con az\u00facar y un poco de harina. No uses agua caliente pues mata la levadura.<\/li>\n<li>Ten cuidado con las semillas de an\u00eds. \u00c9stas tienen un sabor fuerte y agregar m\u00e1s de la cantidad recomendada podr\u00eda arruinar las sutiles notas de an\u00eds del verdadero pan de yema Oaxaque\u00f1o.<\/li>\n<li>En la etapa de pre-mezclado, nos gusta usar un batidor de masa dan\u00e9s. Nos permite mezclar bien todos los ingredientes y es bueno a la hora de intentar trabajar con masas densas.<\/li>\n<li>Tamiza el harina antes de usarla y usa un batidor de mano para combinar el harina con el az\u00facar y la sal. Este m\u00e9todo ayuda a mantener el harina ligera y esponjosa.<\/li>\n<li>Para el primer leudado, coloca la masa dentro de un recipiente engrasado y, con las manos, frota suavemente. Luego c\u00fabrela y coloca en un lugar c\u00e1lido.<\/li>\n<li>Usa una b\u00e1scula para medir las porciones. Esto permite uniformidad y obtener bollos de pan del mismo tama\u00f1o.<\/li>\n<li>Despu\u00e9s de formar el pan, col\u00f3calos en una bandeja y tapa nuevamente para un segundo leudado. Presiona cada pieza contra las semillas de ajonjol\u00ed. Coloca el pan en una bandeja y deja leudar de nuevo.<\/li>\n<li>El pan de yema de Oaxaca tiene un caracter\u00edstico corte en el medio. Utiliza un cuchillo afilado o un cortador de masa. El corte debe ser profundo pero no hasta el punto de cortar el pan por la mitad.<\/li>\n<li>Los bollos de pan artesanal deber\u00e1n volver a reposar tapados para una cuarta subida. Precalienta el horno a 400F y hornea a 375F durante 18-20 minutos.
