Normalmente las costillas de cerdo sin hueso son dif\u00edciles de preparar, ya que pueden secarse muy r\u00e1pidamente y si no se cocinan adecuadamente quedan duras pero cuando se utiliza la t\u00e9cnica sous vide los resultados son excepcionales. Usando esta t\u00e9cnica la carne queda\u00a0blanda y con un sabor excelente. La carne realmente casi se deshace en la boca. Rinde para\u00a06 personas. El costo por porci\u00f3n es menor a $4.00 d\u00f3lares. Para preparar estas Costillas de Puerco Pibil necesitas hacer \u00a0el\u00a0adobo pibil. Utiliza un\u00a0taz\u00f3n\u00a0y a\u00f1ade la pasta de achiote, el or\u00e9gano, el saz\u00f3n y el jugo de naranja. Usando un tenedor disuelve la pasta de achiote con el jugo de naranja y las especias y agrega el vinagre. Trate de cubrir bien todas las costillas de cerdo con el adobo y el aceite de oliva. Sella la bolsa con el sellador al vac\u00edo. Coloca la bolsa en el interior del sous vide preferentemente utilizando la rejilla de metal para evitar que se mueva y cocina durante 24 a 48 horas hasta que \u00a0las costillitas est\u00e9n tiernas. Cuando las costillitas est\u00e9n listas corta la bolsa y asa las costillas en un sart\u00e9n asador por ambos lados hasta conseguir las marcas de la parrilla. Calienta la salsa pibil y a\u00f1ade al plato. Sirve estas\u00a0Costillas de Puerco Pibil estilo familiar \u00a0para cada quien se sirva a su gusto y decora con las rondas de cebolla morada y la naranja. Este platillo requiere de tiempo\u00a0de cocci\u00f3n\u00a0pero la espera vale la pena, porque\u00a0las costillitas estar\u00e1n tiernas y con un sabor exquisito. La t\u00e9cnica de cocci\u00f3n al vac\u00edo o en horno de agua en mi opini\u00f3n es maravillosa para cocinar carnes duras as\u00ed como la carne de cerdo.
