Muchos lindos recuerdos vienen a mi mente con esta receta que estoy a punto de compartir con ustedes en esta serie de\u00a0<strong><a title=\"7 Semanas de Recetas de Cuaresma\" href=\"http:\/\/www.mamalatinatips.com\/2013\/02\/recetas-de-cuaresma-semanales.html\" target=\"_blank\">\"7 Semanas de Recetas de Cuaresma\"<\/a>.<\/strong><\/p>\n<h2>INGREDIENTES<\/h2>\n<ul>\n<li>8 Chiles Poblanos (asados, pelados y limpios)<\/li>\n<li>4 tazas de queso rallado manchego o Monterrey Jack<\/li>\n<li>2 huevos<\/li>\n<li>1 taza de harina para todo uso<\/li>\n<li>Aceite canola<\/li>\n<\/ul>\n<p><span style=\"text-decoration: underline;\">Para la salsa:<\/span><\/p>\n<ul>\n<li>3 tazas de pur\u00e9 de tomate<\/li>\n<li>1 taza de agua<\/li>\n<li>1 cubo de caldo de pollo<\/li>\n<li>sal y pimienta<\/li>\n<li>1\/2 cucharadita de az\u00facar<\/li>\n<\/ul>\n<p><span style=\"text-decoration: underline;\">Para adornar:<\/span><\/p>\n<ul>\n<li>1 taza de tomates picados<\/li>\n<li>1 taza de cebolla blanca finamente picada<\/li>\n<li>1\/2 taza de cilantro finamente picado<\/li>\n<\/ul>\n<p><strong>Tiempo de preparaci\u00f3n: <\/strong>1 hora, sirve 4-6 personas. Costo aproximado es de USD$ 2.50 por persona dependiendo del costo en tu mercado local. Vas a necesitar una batidora, una sart\u00e9n, una cacerola honda, tazones. Esta receta la puedes preparar con un d\u00eda de antelaci\u00f3n. Esta receta es un poco laboriosa, pero vale la pena.<\/p>\n<p>Asa los chiles poblanos en \u00a0un comalito o directamente en la llama de la estufa; cuando listos col\u00f3calos en una bolsa de pl\u00e1stico durante diez minutos para se suden y se puedan pelar mas f\u00e1cilmente. Pela, quita las semillas y la venas para que chile no quede tan picante pero no remuevas el tallo. Rellena los chiles con el queso rallado y revuelca uno por uno en harina. Este ayudar\u00e1 a que el huevo batido se pegue mas f\u00e1cilmente.<\/p>\n<p>Para el rebozado separa la yema de las claras. Bate las claras con la batidora hasta obtener picos blancos suaves como consistencia de merengue. A\u00f1ade las yemas una por una e incorpora. El color del rebozado ser\u00e1 de un color amarillo suave. Despu\u00e9s toma cada chile poblano por el tallo y reboza en el huevo batido, asegurando de cubrir generosamente.<\/p>\n<p>En una sart\u00e9n ten listo el aceite caliente listo para fre\u00edr (alrededor de 350\u00b0 F). Fr\u00ede los chiles poblanos uno por uno hasta obtener un color dorado. D\u00e9jalos reposar sobre una servilleta de papel absorbente para eliminar el exceso de aceite. Puedes colocar dentro del horno para mantener los chiles calientes.<\/p>\n<p>Para preparar la salsa de tomate\u00a0en una cacerola agrega el pur\u00e9 de tomate y los condimentos y deja que hierva a fuego lento. Para preparar la salsa de tomate fresco usa los tomates picados, la cebolla y el cilantro combina en un taz\u00f3n y a\u00f1ade un poco de sal. Esta salsa servir\u00e1 como decoraci\u00f3n pero tambi\u00e9n para dar una textura fresca al platillo.<\/p>\n<p>Para servir, coloca un chile relleno en un plato extendido, ba\u00f1a con un poco de salsa de tomate y decora con la salsa de tomate fresca. Aunque esta receta es un poco laboriosa estoy segura tu familia la adoptar\u00e1 como una de sus favoritas. Cuando pase la Cuaresma puedes rellenar los chiles poblanos con picadillo o bien ponerte creativa \u00a0tratando otros sabores, como rellenar con pescado, camarones o frijoles
