Precision cooking or sous vide sounds complicated, but it is not. The name sous vide in French refers to vacuum-sealing food in a bag, then cooking it to an exact temperature in water.

This cooking method works for cooking a variety of meats, seafood, vegetables, eggs, pickling, poaching, desserts, and infusions such as the culinary lavender syrup.

In the past, the precision cooking technique was only available in professional kitchens, but now it is one of the best tools you can have at home to prepare meals with predictable results every time.

Tips to make the culinary lavender and blue pea flower syrup with the Anova Precision Cooker Nano.

Make sure to have the complete Anova precision cooking kit, including the Anova Precision Cooker Nano, a vacuum sealer, and a 12 L container.

Setting the Anova Precision Cooker Nano

Use high-quality sugar cane, local honey, culinary lavender in dried form, or fresh food-grade lavender flowers.

Please be aware the lavender flowers will not make the syrup purple. The culinary lavender syrup will be amber yellowish in color.

I added dried butterfly pea flowers to give the syrup and purple-blue color. But the use of the blue pea flower is optional.

The trick for a perfect simple syrup is to combine the same amount of sugar and water. And then add the flavorings of your choice into a vacuum sealer bagā€”no need to mix or dilute the sugar.

We like the Anova Precision Vacuum Sealer Bags because they are BPA-free, withstand hot and freezer temperatures, and tear to open when the food is ready. Plus, they’re a plastic neutral product too.

The water with the sugar, honey, and dried flowers cooks for one hour at a temperature of 57Ā°C/135Ā°F.

Make sure to set the Anova Precision Cooker Nano at that temperature and program it for one-hour of cooking.

Allow the water to reach the proper temperature before submerging the bag with the ingredients.

After the hour has passed, the Anova Precision Cooker Nano will sound a beep alerting the syrup is ready. Remove the bag from the water bath and allow it to cool.

Tear the bag to open, use a strainer and pour the culinary lavender and blue pea flower syrup into a mason jar, close the lid and refrigerate. The syrup will remain fresh for several days when properly sealed.

Prepare cocktails or beverages with it. We made a lavender blue pea flower lemonade. It is stunning looking and so refreshing.

You can prepare blue tea extract with the butterfly pea flowers adding 1 cup of water with 1/3 cup of dried pea flowers.

Seal the bag and cook on the sous vide for one hour at the same temperature and time the lavender syrup is being made.

Drizzle some of the blue tea extract on top of the lemonade for achieving a layered, intense purple color. The blue tea turns purple-pink when in contact with citrus juice.

Ingredients
  

  • 1 cup sugar cane
  • 1 tablespoon honey
  • 2 tablespoons lavender culinary grade
  • 1 teaspoon dried butterfly pea flowers food grade
  • 1 cup water

Instructions
 

  • Add the sugar, the lavender, and the butterfly pea flowers to the sous vide bag.
  • Pour the water into the bag and use the Anova Precision Vacuum Sealer to seal the bag.
  • Fill the Anova Precision 12 L Container with water and insert the Anova Precision Cooker Nano.
  • Plugin the precision cooker and set it to 57Ā°C/135Ā°F ā€“ 1-hour cooking. Allow the water to reach the temperature before submerging the bag.
  • Cook the syrup for one hour, and when ready, remove and set aside.
  • Tear the bag to open, use a strainer and pour the culinary lavender and blue pea flower syrup into a mason jar, close the lid and refrigerate.
