Prepare the fun bug snacks with the kids using fresh produce, hummus, and creme cheese.
We love spring and summer because everything is more colorful and brighter. We crave for fresh snacks and the need of eating vegetables and fruits increases.
These snacks are easy to make, and you can adapt based on what you have available or what you find in the supermarket or the farmers market.
We recommend using seasonal produce as that will be at the peak of the season for more flavor and freshness.
We are using an array of different veggies that kids will refuse to eat in a salad but will be enticed to eat when presented in fun bug snacks forms.
The fun bug snacks include heartbreakers tomatoes from my garden, which have a heart shape; plus celery sticks, beet sprouts, lemons, cucumber slices, cashews, roasted chickpeas, cooked beets, nasturtium flowers, and rosemary.
For spreads, we added creme cheese and beet hummus, both perfect to use when making this tasty bug inspired bites as they add protein too.
How to make the fun bug snacks with fresh produce.
All gardens at some point have snails joining the party, so they have inspired our first fun bug snack. To make this bite we are using a celery stick to form the body and then stuffed with beet hummus. We added a half round of a cooked beet slice. Two roasted chickpeas to create the eyes and two rosemary leaves as the antennas.
The Tomato Bug
When growing vegetables we have found many bugs that love the plants. We might not like them, but every insect and bug found in the garden has a function. So inspired on those bugs, we created the tomato bug using celery sticks stuffed with cream cheese, then topped with heartbreaker tomato halves to form the body, and garnished with lemons slices, cashews, and beet sprouts. No doubt a tasty and fun bug bite.
The Butterfly Caterpillar
We grow plants that attract pollinators; thus we get the visit of many butterflies, including the monarchs which are one of our favorites. Inspired by the caterpillars that live and eat in the milkweed in the garden we created this fun bug snacks using celery sticks stuffed with cream cheese, cucumber slices, lemons, petite heartbreaker tomatoes, and cashews.
Fun Bug Snacks with Fresh Produce
- Chopping block
- Pairing knife
- Vegetable cutter
- 6 celery sticks
- 1/2 cup beet hummus
- 6 cooked beet slices
- 12 roasted chickpeas
- 1 rosemary sprig
- 6 cashews
- 1/2 cup soften cream cheese
- 1 mini cucumber thinly sliced
- 1/2 yellow lemon cut in slices
- 6 heatbreaker tomatoes
- 2 tablespoons beet sprouts
- 3 nasturtium flowers
- 2 cups spring mix
- Prep the veggies by cleaning and cutting. Stuff 6 of the celery sticks with cream cheese and the other six with beet hummus.
- Form the bugs using the different elements following the images on the picture.
- Be creative and let your imagination do the work.
- Serve the bug snacks over a bed of greens.
