Red lentils soup with feta cheese and cashews is our vegetarian option for the 7 Weeks of Lent Recipes Series. Red lentils are a beautiful ingredient. They have a nutty flavor, cook faster and are softer than the brown or green lentils varieties.

Ingredients
  

  • 4 cups of red lentils
  • 1 can of coconut milk
  • 4 cups of Thai ginger infused broth
  • 1 tablespoon of curry powder
  • 1/2 cup of creamy feta cheese
  • 1 tablespoon of cashews
  • Salt and pepper to taste

Instructions
 

  • Clean the red lentils with running water, and add to a pot.
  • Our the coconut milk, the broth, the curry powder and season with salt and pepper.
  • Let the soup simmer for 20-30 minutes until lentils are soft.
  • Serve the soup hot and garnish with creamy feta cheese and cashews.

Notes

You don't need to presoak the red lentils before cooking either, they cook in less than 30 minutes.

And now that we are celebrating lent my reflection today is about forgiveness and how important it is to forgive those that have hurt us as well as asking for forgiveness if we are in fault. Forgiving and asking to be forgiven is such a liberating thing. We don’t need to live our lives hostage to those times when we have been hurt or when we have hurt somebody with our actions. Forgiving allows us to move on and live a more peaceful life.
