Grilling and good food is my passion that is why today I want to share with you an easy recipe to prepare queso fundido using your grill at home. Queso fundido is basically melted cheese that in the Mexican culture we eat as an appetizer alongside warm tortillas. Sometimes we do the queso fundido with chorizo, other’s just the cheese. Looks complicated but it is not! This post was compensated and developed in collaboration with Latina Bloggers Connect and the California Milk Advisory Board though all opinions are my own.
- 4 cups of grated Jack cheese from Real California Cheese
- 2 poblano peppers roasted and cut in strips or juliennes
- 2 serrano peppers
- Cooking non-stick spray
- Chips or warm tortillas
Preparation time: 15-30 minutes. Approximate cost per portion (serves 2) $4.00 depending on ingredients market price. You will need a clay bowl appropriate to cook at high temperatures and of course a grill.
Spray non-stick cooking oil to your clay bowls, this will allow the cheese not to stick on the bottom. Then add 2 cups of the the grated cheese in each bowl and top with poblano strips and serrano chiles cut in halves. Turn on your grill let it get to 400 degrees, place the bowl and close the grill for 5-7 minutes. Open and check again, when cheese is bubbling is ready to serve.
This dish is very popular in Mexico, it is one of those that you will find on the menus on many local taquerias and is a treat welcomed by all. As an immigrant I always crave for my Mexican cuisine flavors and having brands that cater to my culture is very important.
